Spicy Beef & Broccoli w/ Rice

Ingredients (Serves 6)


For the Beef:

  • 1 1/2 lb top round beef, thinly sliced

  • 2 tablespoons cornstarch

  • Salt and pepper (to taste)

  • 2 tablespoons oil

For the Broccoli:

  • 1 kg frozen broccoli florets (2 x 500g bags)

For the Sauce:

  • 1 cup chicken broth

  • 1/2 cup hoisin sauce

  • 5 tablespoons rice wine

  • 2 tablespoons soy sauce

  • 3 tablespoons chili garlic sauce

  • 1 teaspoon grated ginger

For the Rice:

  • 3 cups cooked white rice (1/2 cup per serving)


Instructions

1. Cook Rice

  1. Cook your desired amount of rice in a rice cooker, I used 1 cup of dry rice to make 3 cups of cooked


1. Roast the Broccoli:

  1. Preheat your oven to 500°F (260°C).

  2. Spread the frozen broccoli florets on a baking sheet lined with parchment paper.

  3. Drizzle with 1 tablespoon of oil and sprinkle with 1/2 teaspoon of salt.

  4. Roast for 15 minutes, or until the broccoli is crisp and slightly charred around the edges.

2. Prep the Beef:

  1. While the broccoli roasts, slice the top round beef thinly against the grain for tenderness.

  2. Toss the beef slices in 2 tablespoons of cornstarch and season with salt and pepper.

3. Make the Sauce:

  1. In a medium bowl, whisk together the chicken broth, hoisin sauce, rice wine, soy sauce, chili garlic sauce, grated ginger, and 1 tablespoon of cornstatch

4. Cook the Beef:

  1. Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat.

  2. Add the beef in batches, cooking for 2-3 minutes per side until browned and just cooked through. Remove and set aside.

5. Sauté Garlic and Ginger:

  1. In the same skillet, reduce the heat to medium.

  2. Add the minced garlic and ginger, sautéing for 1-2 minutes until fragrant.

6. Combine and Thicken:

  1. Pour the prepared sauce into the skillet with the garlic and ginger, stirring to combine.

  2. Bring the sauce to a simmer and allow it to thicken slightly.

  3. Add the cooked beef and roasted broccoli to the skillet, tossing to coat everything in the sauce.

  4. Simmer for another 2-3 minutes to meld the flavors and ensure the sauce is thickened to your liking.

7. Serve:

  1. Divide up the rice up into 6 equal servings in your meal prep containers

  2. Scoop out 6 equal servings of the beef and broccoli onto the rice.

  3. Put in fridge or freezer or enjoy it right now!
